Nha đam gọt bỏ phần vỏ xanh, thái miếng nhỏ (khi gọt vỏ nha đam thì phải gọt thật sạch phần vỏ xanh để cho nha đam khỏi bị đắng). Rửa sạch nhớt nha đam rồi ngâm vào bát nước muối loãng. Sả nha đam qua nước lần nữa, vảy ráo rồi ướp với khoảng 50g đường.
Hòa bột rau câu với 50g đường còn lại và 500ml nước (nếu muốn ăn thạch mềm hoặc cứng hơn nữa thì có thể thêm hoặc bớt lượng nước). Cho nồi rau câu lên bếp đun sôi trong khoảng 3-4 phút. Cho vào nồi rau câu một ít nước cốt dừa, quấy đều cho nước cốt dừa hòa đều vào rau câu rồi tắt bếp. Để rau câu nguội hẳn thì dùng dao cắt miếng nhỏ.
Đậu sau khi xào cùng đường cho thấm thì đổ ngược trở lại nồi nước ninh đậu. Thêm nha đam vào, đun sôi trở lại rồi tắt bếp, để cho đậu thật nguội.
